First, I should tell you that before I got married, I hated cooking. The end result was always hit or miss, and the mess afterwards was more than I wanted to deal with. Married women would say, "Just wait until you get married, and you'll find that you enjoy it."
I would always reply with a "Hmm, maybe," while thinking in my head, "NO WAY! Good thing I'm marrying a good cook and thank GOSH for Red Robin."
Turns out they were right. I really like cooking, and we've found that we really enjoy cooking together. We've come up with some fun and I'll even admit de-LISH dinners.
Tonight was no exception. Last week he made some Biggest Loser Mexican turkey burgers. We froze 5lbs. worth of ground turkey and have had instant dinner! But tonight, Ian had the wise idea to take those burgers full of peppers, a little cheese, Greek yogurt, salsa and garlic, he added a little corn bread crumbs and viola! We had Mexican meatloaf! As Neil Diamond puts it, "So good, so good, so GOOD!"
Well, we didn't invite Neil to dinner, but I imagine that's what he'd say to our delicious BL inspired Mexican meatloaf. Although I don't think Michael Jillians would approve of the corn bread crumbs....
Speaking of Biggest Loser. Did you catch it? The finale was A-MAZE-ING! I couldn't decide who I wanted to win, but I knew I didn't want it to be Koli. He got too cocky, and tunnel vision-impaired. So for me, it was between Michael and Ashley. I couldn't decide! Then we found out Michael won and I was over the moon happy for him, it was a well-deserved win! But I guess I really wanted Ashley to win, especially after Michael wore those jeans and that BELT! Ashley looked amazing, but they both are well-deserved finalists in my book. Daris too, he just didn't catch my little reality-star heart, that's all.
Since I mentioned Neil, I've found him on youtube, and now he and the frog outside are having a battle of the wills. I have a feeling the frog is going to win....
So far, just in our backyard we have encountered so many animals. Cardinals, turkeys, bunnies, blue jays, marmots, beavers, deer, the usual squirrel....and the list goes on and on. It's fun everyday to wake up and see who's visiting us today. And today, on the way to church, we were stopped by a little family of geese crossing the street. And poor mom got to encounter the varmit living in the floors while she was here. If you ever want to know what a mortifying experience is, have your mother stay with you for the first time ever and let her sleep below an unknown varmit. I'm hoping the 100 degree heat has encouraged that little friend right out the door (hole). We can only hope....
Well, speaking of mom, we were so excited to have her here, and she spoiled us the entire visit! We took the train to the city, said, "YO, wassup" to Lady Lib, tasted at the Millbrook Winery, (one of 3 winery's just a mere 20 minutes from me!) shopped and dined at some of the coolest places we have to offer. It was SO fun! One of my favorite memories will be the wine tasting we did just the two of us. Ian was out of commission that day, but it was a gorgeous blue sky 70 degree, perfect for tasting kind of day. We had in mind to take a picnic and choose a bottle that we'd tasted. You know, cheese, fruit, bread, crackers, and a refreshing vino to compliment all the flavors. This is what we ended up doing.

But it was delicious anyway. Even though half way through the sub we shared, I realized the Subway Artist as they like to be referred, left our chicken in the oven!
I just kept yelling, "No meat! There's no meat in my sammie!"
Today, we got to talk to Pats and the B's on the phone and I was reminded, once again, how beautiful our life really is out here. I know that everyday, but it makes it so much better when we hear voices of encouragement and love from them. We miss our families, but I don't think I would trade my life out here for anything. It's a beautiful life we lead here in NY.
